Rice, one of the most consumed foods worldwide, undoubtedly conquered the Middle and Near East culinary culture. But rice will always grow somewhere else and will always need to be carried towards us. We will never collect it out of the wet soil, we will never dry it, and we will never pack it. We can only unpack rice from paper and plastic boxes produced elsewhere. How can this compete with a renewed relationship every fall by the “stigmata” on the hands of those collecting and pressing the olive from their own trees? It surely can’t, as the pleasure of consumption can never match the love of creation.
